Beet and Chickpea Rendang
I've gotta say, I've been wanting to create this recipe for quite a while and Māla Girl Broths has inspired me to make it come to life!
Rendang is classically made with beef, but also sometimes chicken and lamb. The goal of this dish is to cook the beef in somewhat of a coconut milk "gravy". Slowly simmer the beef for a few hours until its fork tender and has absorbed most of the sauce...well???
Why not do this exact same exercise with soaked chickpeas and beets? Chickpeas take over an hour to cook even after soaked, so why not add some fresh diced beets to to add a nice color enhancement as well as a powerhouse of antioxidants and fiber to say the very least!?
We added a little lemongrass and additional fresh ginger and red jalapeño to make sure flavors really popped. Can you still make this dish just with cosmic curry if you don't have fresh lemongrass and ginger on hand? Most definitely!
We like to create fun and unexpected ways to make veggies the "center of the plate".
BEET AND CHICKPEA RENDANG

We're cooking chickpeas in our cosmic curry broth mix along with coconut milk and beets.
A beautiful color enhancement to say the least!
Olive Oil, 1 Tbsp.
Ginger Root, fresh, minced, 1 Tbsp.
Red Jalapeño, minced, 1 Tbsp.
Lemongrass, minced, 1 Tbsp.
Beets, peeled and diced, 1 cup
Chickpeas, raw, soaked and drained, 1 cup
Coconut Milk, 2 cups
Water, 2 cups
Cosmic Curry Broth Mix
Sparkle Salt, 1/2 tsp.
Carrots, shredded, 1 cup
Clementines, peeled, 2 each
Fennel, thinly sliced, 2 cups
Sparkle Salt, 1/4- 1/2 tsp.
Orange Tahini Dressing, 1.5 oz., see recipe in beet and carrot buddha bowl
Whole Grain 5 Blend, inharvest.com
Carrot and Orange Salad
Heat medium size saucepot over medium heat. Add olive oil, ginger, jalapeño, and lemongrass and sauté for 1 minute to release aromatics of ginger and lemongrass.
Add in beets, chickpeas, coconut milk, water, cosmic curry, sparkle salt and bring to a simmer.
Stir together and close lid. Reduce heat to low and continue cooking for an hour or until chickpeas begin to soften.
Remove lid and cook on medium heat until half of liquid is absorbed, chickpeas and beets are softened.
While beets and chickpeas are cooking, we cooked up inharvest whole grain 5 blend and made a quick carrot and orange salad to serve as a garnish.
