CAULIFLOWER AND RED LENTIL CURRY

If you are looking for an extra boost of protein, but not in the mood to soak beans overnight, give red lentils a try in your life! Not only are they a powerhouse for protein (each 1/4 cup is 12 grams!), but they are ready in 20 minutes start to finish! Both beautiful and low maintenance...my new favorite way of cooking!

Cauliflower pack an incredible amount of vitamins and minerals, and as with whole vegetables provide a great source of fiber and low in calories al natural.
