SOULFULL COLLARD GREENS
I'd like to have the vegan side dish soulfull plate please! I remember going to Cracker Barrel as a kid and always ordering just the side dishes. If I remember correctly, they had a choice of 3,4 or 5 side dish plate. Yum! Well, good southern style green beans or collard beans are typically cooked in bacon, bacon fat and/or smoked ham of some sort. So the. question is, did you love those side dishes for the bacon, or did you love those side dishes for the smokey flavor???
I've decided it was really the smokey flavor. I teamed up with P.S. Flavor on this one and included their "Smokey Southern" seasoning, or in the Māla Girl Broth world, I like to refer to it as vegan bacon salt!
I can assure you, when you make these collards, even the bacon lover will not notice its missing! A good amount of sliced mushrooms and onions caramelized with smokey southern before the collards started simmering in soulfull classic is the secret for these. Pig out!
SOULFULL COLLARD GREENS
On The Side
1 bunch of collard greens simmered with soulfull classic = happy soul. We served these with some cosmic curry rice and pinto beans and some fresh sparkle salt seasoned tomatoes. Rice and beans is your complete protein substitute here and my oh my is it amazing.
Olive Oil, 1/4 cup
Yellow Onions, diced, 2 onions (12 oz. wt.)
Baby Bella Mushrooms, sliced, (about 4-5) 3 oz. wt.
Fresh Garlic, minced, (3 medium cloves), 1/2 oz. wt.
Smokey Southern Spice, (P.S.FLavor), 1 Tbsp.https://psflavor.ecwid.com
Sparkle Salt, 1 1/4 tsp.
Collard Greens, 1 bunch, shredded (12 oz. wt.)
Soulfull Classic Broth Mix, 2 Tbsp.
Ms. Braggs Apple Cider Vinegar, 1 Tbsp.
Water, 2 cups
Heat cast iron pan or medium size sauce pot over medium high heat.
Add in olive oil, onions and mushrooms.
Season with 1 Tbsp. of smokey southern, reduce heat to medium and cook for about 5 minutes. If you feel onions and mushrooms are charring before caramelizing, lower your heat.
Add in garlic and saute another minute.
Add in shredded collards, 1 tsp. sparkle salt, and stir into smokey onions and mushrooms.
Add in 2 Tbsp. of soulfull classic, 2 cups of water and 1 Tbsp. of apple cider vinegar.
Stir to combine. Bring to a simmer and lower heat.
Cover and cook on low for 30 minutes.
Collards are now ready!
These collards are quite tasty served with cosmic curry rice, beans and tomatoes!
