SOULFULL PASTA PRIMAVERA
Looking for a surprisingly simple and delightful pasta? This would be the one! We've simply added in our soulfull classic broth mix with some tomato paste, water and cashew butter for creaminess. Stir it up and plate it up! Veggie choice is up for grabs here, but here's what we had that night: zucchini, roasted peppers, onions, sliced baby bella mushrooms and a little garlic. Chickpeas and cashew butter are added in for an extra pop of protein. Are you trying to cut out carbs? You may want to reconsider....a serving of pasta can also contain an additional 10 grams of protein;)
The trick to getting dinner on the table in under 30 minutes is getting that pasta water boiling! You know what they say..."a watched pot never boils". Don't watch it...slice up some veggies instead!
Already have some leftover veggies and simply need to cook pasta? Consider yourself a prepped pro and sip on a glass of wine or mocktail/cocktail of your choice...you've earned it. Cheers!
SOULFULL PASTA PRIMAVERA
What is pasta primavera? Quite simply a pasta dish with lightly sauteed veggies. Why not love them up with a soulfull classic sauce? Enjoy!
Pasta of choice, 1 cup (we use barilla)
Baby Bella Mushrooms, sliced, 1/2 cup
Zucchini, sliced into half moons, 1/2 cup
Yellow or Red Onions, thinly sliced, 1/2 cup
Roasted Bell Peppers, sliced, 1/2 cup
Chickpeas, drained, 1/2 cup
Sparkle Salt, 1/2 tsp.
Olive Oil, 2-3 Tbsp.
Fresh Garlic, minced, 1/2 Tbsp.
Soulfull Classic Broth Mix , 1 Tbsp.
Almond Butter, Joi, 2 Tbsp.
Pasta Water, 1 cup
Tomato Paste, 1/2 Tbsp. (we use pomi)
Grab a saucepot and get some water boiling for pasta of your choice (linguine, spaghetti, penne...you get the idea).
While your water is boiling, slice up your veggies if you haven't already.
When water is boiling add in your pasta and cook according to package directions.
While your pasta is cooking, get a large saute pan and heat it to medium high heat.
Add in 2 Tbsp. olive oil, minced garlic and veggies. Season veggies with sparkle salt and saute for 2-3 minutes.
Add in 1/2 Tbsp. tomato paste, 1 Tbsp. soulfull classic, 2 Tbsp. almond butter and 1 cup pasta water.
Stir it up and bring it to a simmmer.
Drain your pasta and toss it in the saute pan.
Stir it up and plate it up!.
Garnish away with fresh herbs at the end.
